Pumpkin Spice Waffles

This easy recipe boasts spiced pumpkin waffles that are crispy on the outside and fluffy on the inside. Add a dollop of whipped cream and bon appetit!

Ingredients
  

  • 2 cups all purpose flour
  • 2 tsp baking powder
  • 2 tbsp pumpkin pie spice
  • 1/4 cup sugar
  • 2 tbsp light brown sugar
  • 1/4 tsp kosher salt
  • 4 large eggs
  • 1/2 cup whole milk
  • 1 15oz can 100 % pure pumpkin
  • 3/4 cup unsalted butter
  • 1 tsp vanilla extract

Instructions
 

  • Preheat waffle maker. Melt butter in a small pan over low heat. Shut off heat and let butter cool.
  • Mix together all dry ingredients and set aside.
  • Add eggs into a bowl and beat with a whisk. Add milk, pumpkin, butter and vanilla. Mix until combined.
  • Add dry ingredients into the wet in three rounds. Make sure to fully incorporate all dry ingredients before adding next round. Add 3 tablespoons of batter in the preheated mini waffle maker and cook until the waffle is cooked through completely (about 5 minutes).

Notes

This recipe is adapted specifically for use with a 4" mini waffle maker. For larger waffle irons, this recipe will yield less waffles. Adjust recipe accordingly.
