Preheat waffle maker. Melt butter in a small pan over low heat. Shut off heat and let butter cool.
Mix together all dry ingredients and set aside.
Add eggs into a bowl and beat with a whisk. Add milk, pumpkin, butter and vanilla. Mix until combined.
Add dry ingredients into the wet in three rounds. Make sure to fully incorporate all dry ingredients before adding next round. Add 3 tablespoons of batter in the preheated mini waffle maker and cook until the waffle is cooked through completely (about 5 minutes).
Notes
This recipe is adapted specifically for use with a 4" mini waffle maker. For larger waffle irons, this recipe will yield less waffles. Adjust recipe accordingly.
