Did someone say waffles? Waffles are in constant rotation in our house. So much that we have seriously considered opening a food truck selling coffee, tea and waffles. Who knows, it just might happen one day. 🙂
Mini waffle makers are a God send! They make consistent waffles that are crispy on the outside and fluffy on the inside. Also, minimal mess! Come on somebody!!!
I was not ready to part with pumpkin flavor yet, so I opted for the gingerbread man waffle press to maintain a festive theme this holiday season. I recommend stocking up on canned pumpkin, since I don’t believe it’s sold year round. The kids LOVE these waffles. The best part is this recipe is not loaded with sugar like most other waffle recipes. If sweet is your thing, up the ante with some maple syrup and whipped cream.

Yes, you sure can! You can add any of your favorite additions to create numerous variations of these spiced waffles.
Topping Options: Blueberries, strawberries, bananas, Nutella, thinly sliced apples, chopped pecans, chopped walnuts, whipped cream, maple syrupÂ

Pumpkin Spice Waffles
Ingredients
- 2 cups all purpose flour
- 2 tsp baking powder
- 2 tbsp pumpkin pie spice
- 1/4 cup sugar
- 2 tbsp light brown sugar
- 1/4 tsp kosher salt
- 4 large eggs
- 1/2 cup whole milk
- 1 15oz can 100 % pure pumpkin
- 3/4 cup unsalted butter
- 1 tsp vanilla extract
Instructions
- Preheat waffle maker. Melt butter in a small pan over low heat. Shut off heat and let butter cool.
- Mix together all dry ingredients and set aside.
- Add eggs into a bowl and beat with a whisk. Add milk, pumpkin, butter and vanilla. Mix until combined.
- Add dry ingredients into the wet in three rounds. Make sure to fully incorporate all dry ingredients before adding next round. Add 3 tablespoons of batter in the preheated mini waffle maker and cook until the waffle is cooked through completely (about 5 minutes).
